lamb chops served with mashed potatoes and sautéed vegetables

lamb chops served with mashed potatoes and sautéed vegetables

I seem to have grown a fondness for inventing names. I have combined 4 different herbs, parsley, cilantro, oregano and thyme so wanted to call it Herby, but I promise it has nothing to do with the car. My intention was not to mimic ‘Herbie’ the famous NASCAR competitor with a mind of its own!!!!

These chops have a beautiful tangy taste from being marinated in the yoghurt, making it a refreshing meal. It goes well with vegetables lightly sautéed in olive oil and some mashed potatoes. This could be a good alternative to serve instead of a Sunday Roast out in the sunlight, especially if you are entertaining. Your guests would be swinging their hips with this light and refreshing dish.

Also, please remember the most important ingredient here is that you need to buy good quality meat, and you will have a better tasting dish.

4 Lamb chops

½ Cup Yoghurt

¼ Cup Fresh Cilantro

¼ Cup Fresh Parsley

1 Tsp Thyme (dried)

1 Tsp Oregano

4 Cloves Garlic (minced)

1 Tsp Garam Masala

1 Tsp Mustard Oil

Salt to taste

In a blender take all the herbs, garlic & mustard oil and mince them together. Add the yoghurt to this and blend well.

Add the Garam Masala and mix well.

In a bowl add the yoghurt mixture and marinate the lamb chop for a few hours.

Heat up a grill pan. Add salt before adding the lamb chops to the pan.

Cook the lamb chops on each side for a few minutes.

Serve immediately! Tastes good with rice too!
