This is a really easy way of making bhaji without having the hassle to add a lot of spices. So makes a healthy side and a good accompaniment to any meal.


1/2 Broccoli head

100g Green beans

100g Carrots

100g Baby Corn

2 Red Peppers

1 Onion

5 Garlic Cloves

2 Bay leaves

3 Cardamoms


First take the onion, garlic and half of one red pepper and grind together coarsely.

Then chop all vegetables and set aside.


Vegetable Bhaji

Now heat the oil in a wok and drop in the bay leaves and cardamoms, after the spices sputter for about a minute, then add the coarsely ground onion mixture. Fry for a couple of minutes and drop in the veggies. Stir fry for a few minutes add salt and pepper to taste and cover the wok until the vegetables are cooked. Stir occasionally if you need and add water if the vegetables start to stick. If you have guests over, before serving, top it off with some butter ! 🙂
